Ingredients

The ingredients are:
  • 2 tablespoon butter
  • 1 large shallot, minced
  • 1 pound cooked chicken breast (chopped, 3 cups)
  • 1 cup mushroom, grilled (quartered or halved)
  • 1/2 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • Salt and pepper, to taste
  • 1 pound dried pasta
  • 2 cups peas (frozen, thawed)

How to Make

  • Step 1: Bring large pot of salted water to a boil.

  • Step 2: Heat butter in large skillet and saute shallot until softened, about 5 minutes. Add chicken and mushrooms to heat through, stirring occasionally, another few minutes. Add cream and cheese, season with salt and pepper, and keep warm over low heat.

  • Step 3: Meanwhile, cook pasta according to package directions. Two minutes before pasta is done, add peas to pot. Drain, reserving 1/4 cup pasta cooking water.

  • Step 4: Add pasta and peas to skillet, toss to combine. If pasta looks dry, add reserved pasta cooking water. Serve warm, topped with additional cheese. Refrigerate any leftovers.
