Step 1: Bring large pot of salted water to a boil.
Step 2: Heat butter in large skillet and saute shallot until softened, about 5 minutes. Add chicken and mushrooms to heat through, stirring occasionally, another few minutes. Add cream and cheese, season with salt and pepper, and keep warm over low heat.
Step 3: Meanwhile, cook pasta according to package directions. Two minutes before pasta is done, add peas to pot. Drain, reserving 1/4 cup pasta cooking water.
Step 4: Add pasta and peas to skillet, toss to combine. If pasta looks dry, add reserved pasta cooking water. Serve warm, topped with additional cheese. Refrigerate any leftovers.
