Step 1: Preheat oven to 350°F.
Step 2: Whisk together eggs and cream(or milk), parsley, salt and pepper.
Step 3: Melt butter in 10-inch (oven proof) nonstick skillet over medium heat. Add peppers, onion and sausage. Cook, stirring, until warmed through, about 3 minutes. Top with cheese, then pour in egg mixture. Cook until edges begin to set, 1-2 minutes. Transfer to oven and bake until center is set, about 20 minutes (safe internal temperature 160°F).
Step 4: Let cool in pan 5-10 minutes before serving. Refrigerate any leftovers.
