  • 8 large eggs
  • 2 tablespoons heavy cream (or milk)
  • 2 tablespoons fresh parsley (chopped)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon butter
  • 2 bell peppers (grilled, coarsely chopped)
  • 1 onion, coarsely chopped (grilled)
  • 8 ounces sausage (cooked, cut into bite size pieces)
  • 1/2 cup shredded cheese (like gruyere or cheddar)

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Whisk together eggs and cream(or milk), parsley, salt and pepper.

  • Step 3: Melt butter in 10-inch (oven proof) nonstick skillet over medium heat. Add peppers, onion and sausage. Cook, stirring, until warmed through, about 3 minutes. Top with cheese, then pour in egg mixture. Cook until edges begin to set, 1-2 minutes. Transfer to oven and bake until center is set, about 20 minutes (safe internal temperature 160°F).

  • Step 4: Let cool in pan 5-10 minutes before serving. Refrigerate any leftovers.
