Step 1: Soak beans overnight
Step 2: Drain
Step 3: Add water to cover
Step 4: Add ham hock which you have studded with several cloves
Step 5: Add leeks
Step 6: Simmer 1 hour
Step 7: Add potatoes
Step 8: Simmer 1 more hour adding more water as needed
Step 9: At end of cooking brown
Step 10: Butter and flour until almost burnt
Step 11: Add seasonings
Step 12: Add some bean water
Step 13: Pour into beans
Step 14: Cook until thickened
Step 15: Season to taste
