Step 1: Combine 1 tablespoon flour with some salt and dredge meat in mixture.
Step 2: Melt 1 tablespoon butter in a frypan and add meat and brown on all sides, then add mushrooms, onions and garlic and cook for 3-4 minutes or until nearly tender and then remove the meat mixture and add 2 tablespoons butter to the same pan and when the butter has melted add flour and tomato paste and cook for 2 or 3 minutes and then slowly pour in beef stock whisking to get a smooth mix and cook until thickened and now return meat mixture to pan, then add sour cream and sherry mixing until incorporated and serve with rice or noodles.
Step 3: NOTE -Grandmother always put more sherry in and there were never any leftovers for the next day. My kids also loved this one. Use any kind of steak. Sour cream can be substituted with light carnation milk with a dash of vinegar or creme fraiche.
