Ingredients

The ingredients are:
  • 110 grams puff pastry, thawed (1 sheet about 23cm square))
  • 80 grams feta cheese, crumbled
  • 150 grams cherry tomatoes, halved (10 cherry tomatoes specified)
  • 1 zucchini, small and thinly sliced
  • 25 grams salami, quartered (4 slices specified)
  • 1/3 cup black olives, pitted
  • Baby rocket leaves, to serve

How to Make

  • Step 1: Preheat oven to hot, 200C.

  • Step 2: Lightly grease a baking tray with baking paper and cut corners from 1 thawed sheet of puff pastry to form a round and place on prepared tray.

  • Step 3: In a bowl, combine feta, cherry tomatoes, zucchini, salami, olives and seasoning, to taste.

  • Step 4: Place mixture onto pastry leaving a 4cm border and pleat pastry around filling, making a raised edge, leaving the centre open, displaying the filling.

  • Step 5: Bake for 30-35 mins until the pastry is golden and crisp and serve topped with baby rocket leaves.
