Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 shallot, thinly sliced
  • 2 cups cremini mushrooms (sliced)
  • 1 1/2 cups portobello mushrooms (sliced)
  • 2 teaspoons minced garlic
  • 1/4 teaspoon salt, divided
  • 12 ounces bread dough(pizza dough)
  • 1 1/3 ounce goat cheese (crumbles, about 1/3 cup)
  • 3 ounces shredded mozzarella cheese (about 3/4 cup)
  • 1 cup arugula, packed
  • 1 teaspoon lemon juice
  • 1 teaspoon oil (truffle oil, optional)

How to Make

  • Step 1: Place a pizza stone or baking sheet in the oven. Preheat to 500°F.

  • Step 2: Heat oil in a large non-stick skillet over medium heat. Add the shallots and cook, stirring occasionally until soft, 1 to 2 minutes. Add the mushrooms and garlic; cook, stirring often, until the liquid has almost evaporated, 5 to 6 minutes. Remove from the heat and sprinkle with 1/8 teaspoon salt and set aside.

  • Step 3: Roll the dough into a 13 inch circle on a large piece of parchment paper; pierce with a fork.

  • Step 4: Sprinkle the goat cheese over the dough; spread the mushroom mixture over the goat cheese. Top with mozzarella.

  • Step 5: Place the pizza on the preheated pizza stone; bake at 500°F for 13 to 14 minutes.

  • Step 6: Toss the arugula with the lemon juice.

  • Step 7: Top the pizza with the arugula mixture. Drizzle with truffle oil if desired. Sprinkle with the remaining 1/8 teaspoon salt.
