Ingredients

The ingredients are:
  • 800 grams cabbage (red cabbage, cut into 6 wedges, 1 small red cabbage, including the core/stem part)
  • 2 tablespoons olive oil
  • 8 grams garlic clove, finely chopped (1 clove )
  • 1/4 cup dry white wine
  • 1 cup heavy whipping cream
  • 1 tablespoon mustard, wholegrain
  • 50 grams onion, finely chopped ( this should be 1/2 small onion )
  • 60 grams spring onions (finely diced, 2 spring onions/eschallot )
  • 2 tablespoons finely chopped chives (fresh, to serve)

How to Make

  • Step 1: Brush the cabbage with olive oil.

  • Step 2: Heat a BBQ plate or a fry pan and grill/fry wedged cabbage on each side til golden brown and tender.

  • Step 3: Keep cabbage wedges warm; Cook the diced onion in the same pan/grill until just soft, then add the garlic to the pan to soften, then add the wine, cream and mustard. and bring to a boil and then reduce heat, simmer cream sauce for about 5 minutes or until the sauce thickens slightly.

  • Step 4: Pour the sauce over the cabbage wedges, sprinkle on the chopped chives and serve.
