Ingredients

The ingredients are:
  • 6 tablespoons water
  • 1/4 cup peanut butter (creamy)
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar (rice vinegar)
  • 1 1/2 teaspoons gingerroot (minced ,fresh)
  • 1 1/2 teaspoons sesame oil
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon chile paste (with garlic, optional)
  • 2 cloves garlic, minced
  • 8 ounces dry udon noodles
  • 1 pound bok choy (sliced, 4 cups)
  • 1/2 pound peas (snow peas, halved crosswise, 2 cups)
  • 1 cup carrot, shredded

How to Make

  • Step 1: Combine first 10 ingredients (water thru garlic) in a small saucepan; stir with a whisk until blended.

  • Step 2: Bring to a boil; cook 1 minute, stirring constantly. Set aside.

  • Step 3: Cook noodles in boiling water 8 minutes. Drain well.

  • Step 4: Combine noodles, peanut sauce, bok choy, snow peas, and carrot in a large bowl, and toss well to coat.
