Ingredients

The ingredients are:
  • 1 3/4 cups water
  • 8 ounces dry rice (jasmine rice, rinsed, drained, 1 1/4 cups)
  • 1/2 teaspoon salt
  • 1/2 cup peas, frozen
  • 2 tablespoons olive oil (extra virgin)
  • 6 green onions, thinly sliced
  • 2 tablespoons lemon juice (fresh)
  • 2 tablespoons parsley, chopped (fresh)
  • 1 tablespoon grated lemon peel

How to Make

  • Step 1: Combine 1 3/4 cups water, rice, and salt in large saucepan.

  • Step 2: Bring to boil over high heat.

  • Step 3: Reduce heat to low; cover and cook until rice is tender, about 15 minutes.

  • Step 4: Remove from heat.

  • Step 5: Let stand covered 15 minutes.

  • Step 6: Fluff with fork.

  • Step 7: Cool.

  • Step 8: Cook peas in medium saucepan of boiling salted water 1 minute. Drain. Rinse under cold water. Drain.

  • Step 9: Heat oil in large nonstick skillet over medium-high heat. Add all but 2 tablespoons green onions; sauté 30 seconds.

  • Step 10: Add rice and sauté until heated through, stirring to break pieces, about 4 minutes.

  • Step 11: Add peas, lemon juice, parsley, and lemon peel.

  • Step 12: Sauté 2 minutes to blend flavors.

  • Step 13: Transfer to serving bowl.

  • Step 14: Sprinkle with remaining green onions.
