  • 4 cloves garlic, minced
  • 1 tablespoon kosher salt
  • 1/2 cup chopped flat leaf parsley
  • 32 ounces bread (crusty bread, halved horizontally, 2 loaves)

How to Make

  • Step 1: Prepare grill for cooking.

  • Step 2: Heat butter with garlic and salt over moderate heat, stirring, until melted.

  • Step 3: Transfer to a bowl and cool.

  • Step 4: Stir in parsley and pepper to taste.

  • Step 5: Brush cut sides of bread with half of garlic butter.

  • Step 6: Grill bread, cut sides down, 5 to 6 inches over glowing coals 2 minutes.

  • Step 7: Turn bread over and brush with remaining garlic butter.

  • Step 8: Grill until golden brown, 2 to 3 minutes more.

  • Step 10: Herb-garlic butter can be prepared 1 day ahead and chilled, covered. Melt before proceeding.
