Step 1: Heat olive oil in a medium saucepan. Add onions and cook until translucent then add garlic and cook until garlic turns golden without burning.
Step 2: Add tomato sauce, honey, cider vinegar, molasses, red wine vinegar and cinnamon and stir together. t Bring mixture to a boil, then lower heat and simmer for 1 hour.
Step 3: With an immersion blender, blend mixture until smooth.
Step 4: Make a slurry from the cornstarch and cold water and stir it in the pot.
Step 5: Increase heat to medium and bring mixture to a boil. If you want thicker ketchup, add more cornstarch to a little extra cold water and stir in, heat, boil, etc.
Step 6: When your preferred thickness has been reached, remove from heat, cool, store in a container and chill.
