  • 1 pint cherry tomatoes (halved)
  • 2 tablespoon parsley, chopped (fresh)
  • 2 tablespoons basil, chopped (fresh)
  • Red pepper flakes (pinch of, optional)
  • 1/2 shallot, minced
  • 1 garlic clove, minced
  • 1 lemon, juiced
  • 1/2 cup olive oil (extra-virgin)
  • FOR TILAPIA*
  • 2 tablespoon olive oil (extra-virgin, divided)
  • 4 fillets (16 ounces) tilapia fish
  • Salt and pepper, to taste

How to Make

  • Step 1: In a medium bowl, gently mix the salsa ingredients; set aside.

  • Step 2: Preheat broiler to medium-high heat (450°F). Line a baking sheet with aluminum foil and brush with 1 tablespoon of oil.

  • Step 3: Place fillets on a baking sheet. Brush with remaining oil, then season with salt and pepper.

  • Step 4: Cook fillets 6 to 8 minutes, 4 to 5 inches from broiler, until fish reaches an internal temperature of 145°F.

  • Step 5: To serve, place fillets on plates and spoon salsa over each. Serve warm or at room temperature.
