  • 16 ounces light cream ,(1 quart)
  • 1/4 teaspoons salt
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon cayenne pepper

How to Make

  • Step 1: Shuck 18 oysters keeping oyster liquor. In a large pot

  • Step 2: Saute scallions in butter until tender.

  • Step 3: Add remaining ingredients.

  • Step 4: Cook over low heat until edges of oysters begin to curl, and mixture is hot, but not boiling.

  • Step 5: Garnish with sliced scallions, and serve with toasted bread or crackers.
