Step 1: Heat oil in a large skillet with a tight fitting lid,and cook onion for three minutes. Add garlic stir an additional minute, then add bulgur and let it brown slightly.
Step 2: Add the broth and bring to a boil
Step 3: Turn heat on low add the remaining ingredients except parsley, cover and let cook 25 minutes or until water is absorbed.
Step 4: Let it sit covered 10 minutes and fluff with fork, garnish with parsley.
