Ingredients

The ingredients are:
  • 4 tablespoons olive oil
  • 3 cloves garlic ,peeled let whole
  • 2 pounds bone in chicken thighs
  • 1 cup onions,chopped
  • 1 pound tomatoes,chopped
  • 2 red bell peppers, roasted ,skinned,chopped
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 1/4 cup dry white wine
  • 1 cup chicken broth
  • 1/2 teaspoon salt

How to Make

  • Step 1: Heat oil add whole peas garlic cloves

  • Step 2: Saute unt garlic is golden

  • Step 3: Remove

  • Step 4: Add chicken and saute until golden

  • Step 5: Remove

  • Step 6: Add onion

  • Step 7: Add tomatoes and peppers

  • Step 8: Add wine simmer for 10 minutes

  • Step 9: Add herbs they used fresh whole branches we are using dry

  • Step 10: Add chicken stock

  • Step 11: And chicken

  • Step 12: Mince cooked garlic

  • Step 13: Add to chicken

  • Step 14: Braise for 30 minutes until chicken is tender add water if needed dont burn but cook until thick

  • Step 15: Remove bay leaf season to taste
