Step 1: In a bowl combine the cheeses, honey, vanilla and cinnamon. Spread mixture onto half of the bread slices; top cream cheese mixture with banana slices.
Step 2: On the rest of the bread slices spread with the peanut butter; place on the banana slices (second half of the bread slices) spread side down.
Step 3: Refrigerate for 10 minutes (this is important so don't skip this step).
Step 4: In a large skillet on medium low heat, melt 2 tablespoons of butter and then add 2 sandwiches; cook until bread is golden brown and cheese mixture is softened (3-5 minutes); flip and cook other side (3-5 minutes).
Step 5: Repeat with remaining butter for the other 2 sandwiches. Garnish with confectioners sugar and banana slices if desired.
