Ingredients

The ingredients are:
  • 4 ounces cream cheese (softened)
  • 1/4 cup mascarpone cheese (softened)
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 8 ounces brioche bread (sandwich bread, 8 slices)
  • 2 bananas, whole (halved crosswise and then sliced lengthwise in 1/2 inch thick slices)
  • 1/2 cup peanut butter (the crunchy type)
  • 4 tablespoons butter, divided
  • Banana slices, garnish

How to Make

  • Step 1: In a bowl combine the cheeses, honey, vanilla and cinnamon. Spread mixture onto half of the bread slices; top cream cheese mixture with banana slices.

  • Step 2: On the rest of the bread slices spread with the peanut butter; place on the banana slices (second half of the bread slices) spread side down.

  • Step 3: Refrigerate for 10 minutes (this is important so don't skip this step).

  • Step 4: In a large skillet on medium low heat, melt 2 tablespoons of butter and then add 2 sandwiches; cook until bread is golden brown and cheese mixture is softened (3-5 minutes); flip and cook other side (3-5 minutes).

  • Step 5: Repeat with remaining butter for the other 2 sandwiches. Garnish with confectioners sugar and banana slices if desired.
