Ingredients

The ingredients are:
  • 2 pounds chicken breast (cooked, cut into chunks, 4 cups)
  • 2 tablespoons lemon juice
  • ¾ cup mayonnaise
  • 1 teaspoon salt
  • 1 jar (4 ounces) pimentos, minced
  • 2 cups celery, chopped
  • 4 eggs, hard-boiled,sliced
  • 1 can (10 ounces) condensed cream of chicken soup
  • 1 teaspoon onion, finely minced
  • FOR TOPPING
  • 2/3 cup almond nuts ( flakes,finely chopped ,toasted)
  • 8 ounces shredded cheddar cheese
  • 1 bag (6 ounces) potato chips (plain, crushed, 2 cups)

How to Make

  • Step 1: Combine all ingredients except eggs, cheese, potato chips and almonds. Place in large rectangular dish.

  • Step 2: Layer eggs on top. Cover, then let stand overnight in refrigerator.

  • Step 3: The next day, top with cheese, chips and almonds.

  • Step 4: Bake at 400 degrees for 20 to 25 minutes until hot and bubbly
