Ingredients

The ingredients are:
  • 26.4 grams Ritz crackers (crushed, 8 crackers, I use whole wheat)
  • 8 ounces scallops (whole sea or 16 bay scallops, fresh, dry, fresh Lobster, Langostinos, Clams, Shrimp, or any fresh White Fish may be substituted)
  • 1 tablespoon butter, cut into tiny pieces
  • 1/2 lemon, juice of
  • Pepper, to taste
  • Salt to taste, optional
  • Extra Virgin Olive oil, to drizzle over top before baking

How to Make

  • Step 1: Preheat oven to 325 degrees F.

  • Step 2: Crush crackers, and set aside.

  • Step 3: Place the seafood you are using in each casserole dish(es). (The amount this will serve, depends on how many individual casserole dishes you make. I use about an 8 X3" individual casserole dish for each serving).

  • Step 4: Add the seafood into each casserole dish(es).

  • Step 5: Dot each one with butter pieces. (1 tablespoon for each casserole dish).

  • Step 6: Squeeze on the lemon juice (1/2 of a lemon for each casserole dish).

  • Step 7: Add crushed Ritz crackers over the seafood/fish.

  • Step 8: Drizzle Extra Virgin Olive Oil over the top of each casserole dish.

  • Step 9: Sprinkle with desired amount of pepper and salt, if using.

  • Step 10: Bake for 25 minutes, at 325 degrees F, until golden brown on top.
