Ingredients

The ingredients are:
  • For dressing:
  • 1/2 cup mayonnaise
  • 1 shallot, minced
  • 1 tablespoon sherry wine vinegar
  • 1 garlic clove, minced
  • 2 teaspoons dijon mustard
  • 1/3 cup crumbled roquefort cheese
  • 3 tablespoons heavy cream
  • For salad:
  • 1 can (15 ounces ) beets,drained
  • 1 head romaine lettuce,chopped
  • 1/4 cup red onion, thinly sliced
  • 1 head watercress , thick stems trimmed
  • ,chopped
  • 3/4 cup walnut halves, toasted

How to Make

  • Step 1: Make dressing:

  • Step 2: Whisk first 5 ingredients in small bowl to blend.

  • Step 3: Fold in Roquefort cheese and cream. Season dressing to taste with salt and pepper.

  • Step 4: (Can be prepared 1 day ahead. Cover and refrigerate.)

  • Step 5: Make salad:

  • Step 6: Put the lettuce on plate top with beets

  • Step 7: Top with some onion slices and watercress sprigs.

  • Step 8: Drizzle with dressing

  • Step 9: Sprinkle with walnuts and serve.
