Ingredients

The ingredients are:
  • 1 tablespoon fresh lemon juice
  • 7 grams garlic, crushed (1 clove fresh garlic)
  • 1 teaspoon fennel, finely chopped (fresh)
  • 3 tablespoons oil (peanut oil)
  • 2 teaspoons soy sauce
  • 1/2 teaspoon peppercorns, crushed
  • 1 pound scallops
  • 250 grams bacon rashers (rind removed)

How to Make

  • NOTE: Wooden/Bamboo skewers, will burn easily over a hot grill. Soak them in warm water for 15 to 30 minutes before threading this ensures they will not cook or burn along with the food

  • Step 1: In a bowl, combine the first 7 ingredients to make a marinade.

  • Step 2: Rinse and clean the scallops and stir into the marinade; leave scallops in marinade for 1 1/2 hours.

  • Step 3: Drain the scallops from the marinade and wrap each scallop in a piece of bacon and thread onto skewers ~ If preferred cut bacon into suitable pieces, depending on the size of the scallops, and wrap them around the scallop.

  • Step 4: Grill for 5-7 minutes.

  • Step 5: The bacon should be crisp, so turn the scallops once or twice during cooking and be careful not to overcook.
