Ingredients

The ingredients are:
  • 8 ounces shrimp
  • 1 clove garlic,smashed
  • 1/2 teaspoons rosemary, chopped
  • 2 cans (30 ounces)cannellini beans,(15 ounces each),drained
  • 2 cups vegetable broth
  • 4 tablespoons extra-virgin olive oil
  • 2 tomatoes, diced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoons fresh basil,torn

How to Make

  • Step 1: In pan

  • Step 2: Add the rosemary, cannellini beans, broth, salt and pepper and simmer for 20 minutes, over a medium heat. Stirring frequently so they dont burn

  • Step 3: In skillet at end of beans cooking

  • Step 4: Heat olive oil

  • Step 5: Add the shrimps and garlic

  • Step 6: Cook each side of shrimp for 1 1/2 minutes

  • Step 7: Add tomatoes at end

  • Step 8: Combine with bean mixture

  • Step 9: Season to taste

  • Step 10: Garnish with basil
