Ingredients

The ingredients are:
  • 700 grams snow peas (fresh, trimmed, topped and tailed)
  • 1 cup snow pea (tendrils, fresh, loosely packed or use snipped chives
  • 1 to 2 tablespoons sesame seeds (toasted)
  • FOR SESAME DRESSING
  • 2 tablespoons light soy sauce
  • 2 tablespoons rice vinegar (brown)
  • 2 teaspoons sesame oil
  • 1 teaspoon caster sugar

How to Make

  • Step 1: Blanch snow peas in boiling water in batches until bright green (1-2 minutes) then drain and refresh in iced water until chilled (2-4 minutes), & drain well.

  • Step 2: For sesame dressing, whisk all the ingredients in a bowl to combine and season to taste.

  • Step 3: Combine snow peas and snow pea tendrils or chives in a bowl, drizzle with the sesame dressing, toss to combine and serve scattered with sesame seeds.
