Step 1: Blanch snow peas in boiling water in batches until bright green (1-2 minutes) then drain and refresh in iced water until chilled (2-4 minutes), & drain well.
Step 2: For sesame dressing, whisk all the ingredients in a bowl to combine and season to taste.
Step 3: Combine snow peas and snow pea tendrils or chives in a bowl, drizzle with the sesame dressing, toss to combine and serve scattered with sesame seeds.
