Ingredients

The ingredients are:
  • 2 cups self-raising flour, sifted (300 grams)
  • 750 ml vanilla ice cream, softened
  • 2/3 cup sunflower oil (165 ml)
  • 1 egg, lightly beaten
  • 150 grams caster sugar
  • 3 teaspoon instant coffee granules, crushed
  • Espresso, to serve

How to Make

  • Step 1: Preheat the oven to 180°C and grease a 12-hole muffin pan.

  • Step 2: Place flour in a large bowl.

  • Step 3: Whisk the ice cream, oil and egg in a separate bowl to combine, then add to flour and fold through to combine and then spoon batter into prepared muffin holes and bake for 20 minutes or until a skewer inserted in the centre comes out clean.

  • Step 4: Place the sugar and coffee in a bowl. While muffins are still warm, toss in sugar mixture to coat and serve with espresso.
