Ingredients

The ingredients are:
  • 600 ml Verjuice
  • 100 grams caster sugar
  • 700 grams pears, moderately ripe (4 pears specified)
  • 30 grams ginger, fresh and peeled
  • 2 tablespoons honey
  • 3 cups ice, crushed ice
  • TO SERVE:-
  • Pear, dried (optional)
  • Apple, dried (optional)

How to Make

  • Step 1: Place 100 millilitres of Verjuice and 100 grams of sugar into a medium size pot and place over a high heat and bring to the boil, then remove and cool. (this syrup will last up to 3 months in the fridge).

  • Step 2: Cut the pears into quarters and remove the core, then roughly chop into small pieces.

  • Step 3: Place the pears into a blender with the fresh ginger, honey, 500 millilitres of Verjuice, Verjuice syrup and blend until smooth.

  • Step 4: Half fill 5 glasses with crushed ice, pour over the pear mixture.

  • Step 5: Serve with dried pear or apple (optional).

  • Step 6: Tips: buy pears at least 3 or 4 days in advance to ripen out of the fridge. If the pears are very green they will be very dry.
