Ingredients

The ingredients are:
  • 8 ounces shredded cheddar cheese
  • 8 ounces cooked white rice (2 cups ),hot
  • ¼ teaspoon paprika
  • 1 tablespoon olive oil
  • 1/4 cup minced green bell pepper
  • 2 tablespoons onion, minced
  • 1 cup tomato sauce (1 can)
  • 2 eggs, sliced (hard-boiled)

How to Make

  • Step 1: Preheat oven to 350 degrees

  • Step 2: While rice is hot mix in 1/2 the cheese

  • Step 3: Meanwhile in skillet heat oil add onion and pepper

  • Step 4: Saute until softened

  • Step 5: Add paprika

  • Step 6: Fold into rice it did not have salt and pepper in recipe but I would include some to taste here

  • Step 7: Pour into pam sprayed buttered casserole

  • Step 8: Cover with the rest of the cheese

  • Step 9: Bake 15 minutes then add tomato sauce and eggs on top

  • Step 10: Bake for 15 more minutes until bubbly
