Ingredients

The ingredients are:
  • FOR MARINADE
  • 1/2 cup sugar
  • 1 1/2 tablespoons salt (I only used 1 tablespoon)
  • 1 tablespoon dried thyme
  • 1/2 tablespoon cumin, ground
  • 1 bay leaf (crushed - the original recipe states 1 tablespoon crushed bay leaves)
  • 1 teaspoon pepper
  • 1 teaspoon oregano (Mexican, ground, I used 1 tablespoon fresh oregano)
  • 3 tablespoons chile caribe (I used chili sauce)
  • 4 allspice berries
  • 4 cloves
  • 1 stick cinnamon
  • 6 cups water
  • FOR PORK
  • 1 pound pork loin chops (double loin pork chops, about 4 pork chops)
  • Salt
  • Pepper
  • 3 tablespoons olive oil
  • Manchamantel Sauce (3 cups https://www.recipezazz.com/recipe/papantla-pork-with-manchamantel-sauce-36629 or your favorite sauce)

How to Make

  • Step 1: In a large bowl or pan large enough to hold the pork chops combine all marinade ingredients and the add the pork chops and let marinate overnight. Remove chops and bring to room temperature and season chops with salt and pepper.

  • Step 2: Preheat oven to 400 degrees F.

  • Step 3: In a skillet over high heat add the olive oil and when hot add the pork chops and sear on both sides until browned (a minute or so on each side). Remove from skillet and place in baking pan or cookie sheet cook in oven for 20 minutes or until internal temp is 140 degrees F. **You can also cook on a grill over a medium low fire.

  • Step 4: Place the sauce on a plate and place chops on top of sauce.
