Ingredients

The ingredients are:
  • 400 gram pasta sauce (Barilla Olive was specified)
  • 200 grams mozzarella cheese
  • 1/2 cup basil leaves (fresh plus extra leaves to serve)
  • 500 grams eggplant (16 slices chargrilled specified)
  • 30 grams schnitzel mix (1/4 cup Masterfoods Garlic & Herb Schnitzel Mix specified)
  • 20 grams parmesan cheese (1/4 cup pre-shredded)

How to Make

  • Step 1: Preheat grill on high.

  • Step 2: Lightly grease a small shallow baking tray or ovenproof frying pan and place under the grill/broiler to warm.

  • Step 3: Spoon pasta sauce into a microwave-safe bowl, cover and microwave on High for 1 minute or until warmed through.

  • Step 4: While pasta sauce heats up, thinly slice the mozzarella and shred the basil.

  • Step 5: Once the tray or pan is warm, carefully remove from oven and place 4 eggplant slices in the base and top each slice with one-quarter of the pasta sauce, one-quarter of the mozzarella and one-third of the basil and repeat layering 3 more times, finishing with mozzarella and sprinkle with the schnitzel mix and parmesan and season.

  • Step 6: Grill/broil for 5 minutes or until warmed through and golden on top and serve topped with extra basil.
