Ingredients

The ingredients are:
  • 1/4 cup walnuts
  • 375 grams burrata, fresh 3 x 125 grams specified (soft white Italian cheese)
  • 400 grams figs, fresh and sliced crossways 8 figs specified
  • 1/4 cup basil leaves, loosely packed
  • 3 tablespoons extra virgin olive oil
  • 1 tablesoons Vino Cotto (can substitute with a ruby red port or a sweet sherry)
  • Sea salt, to season
  • Ground black pepper, freshly to season

How to Make

  • Step 1: Preheat a fan forced oven to 200C.

  • Step 2: Place the walnuts onto a baking tray and place into the preheated oven to bake for 8 - 10 minutes and then working quickly, place the hot walnuts into a tea towel and rub to remove the skins and set aside to cool.

  • Step 3: Place the balls of burrata in the centre of a large platter and arrange the fig slices around the burrata, then sprinkle over the walnuts and basil leaves.

  • Step 4: Drizzle the burrata and figs with olive oil and Vino Cotto, then season the burrata with salt and the figs with pepper and serve.
