  • 4 cups sweet onions, sliced crosswise 1/2" thick and separated into rings
  • 2 cups flour
  • 1⁄2 cup buttermilk
  • 1⁄2 cup milk
  • 1 cup cornmeal
  • 1⁄3 cup cornstarch
  • 3 tablespoons baking powder
  • 1 1⁄2 tablespoons seasoned salt

How to Make

  • Step 1: Submerge onions in a bowl of ice water

  • Step 2: Soak 30 minutes.

  • Step 3: Meanwhile

  • Step 4: Place 1 cup flour in a bowl.

  • Step 5: Stir buttermilk and milk in another bowl. Whisk remaining flour with cornmeal,cornstarch, baking powder, and seasoned salt in a third bowl

  • Step 6: Set aside.

  • Step 7: Heat oil until a deep-fry thermometer reads 350°.

  • Step 8: Drain onions and pat dry with paper towels.

  • Step 9: Working in batches

  • Step 10: Dredge onions in flour

  • Step 11: Shaking off excess

  • Step 12: Dip in milk

  • Step 13: And then in cornmeal mixture

  • Step 14: Fry, flipping once, until golden and crisp, 1–2 minutes.

  • Step 15: Drain rings on paper towels

  • Step 16: Sprinkle with more seasoned salt.
