Ingredients

The ingredients are:
  • 10 ounces frozen spinach,thawed
  • 1/4 teaspoon crushed chile pequin
  • 1 tablespoon shortening
  • 1 cup tomato, chopped
  • 2 ounces bacon,(optional),chopped
  • 2 cans (30 ounces)pinto beans,drained,(15 ounces each)
  • 3 tablespoons onion,minced
  • 1 teaspoon salt

How to Make

  • Step 1: Drain and chop spinach

  • Step 2: Then set aside.

  • Step 3: Sauté onion and bacon in a medium-sized saucepan at medium heat in shortening

  • Step 4: Add spinach and tomato to onion and bacon and cook for an additional 5 minutes.

  • Step 5: Mix in beans

  • Step 6: Sprinkle with crushed red chile pequin

  • Step 7: Heat to warm
