Ingredients

The ingredients are:
  • 1 1/2 cups almond meal (185 grams)
  • 150 grams muesli, toasted
  • 290 grams Medjool dates, Medijool pitted and chopped (12 Medijool dates specified)
  • 1 cup prunes, pitted and chopped (170 grams)
  • 1/3 cup currants, chopped (50 grams)
  • 1/3 cup dried cranberries, chopped
  • 1/2 cup sunflower seeds (80 grams)
  • 2 tablespoons linseed or chia seeds (see note)
  • 2/3 cup almonds, lightly toasted, and chopped (110 grams)
  • 2 tablespoons raw cacao powder (see note) or Dutch cocoa powder
  • 2 teaspoons ground cinnamon
  • 2 tablespoons tahini
  • 1/3 cup maple syrup (80 ml)
  • 2 tablespoons apple juice

How to Make

  • Step 1: Grease and line the base and sides of a 20cm square cake pan with baking paper.

  • Step 2: Combine all the dry ingredients, reserving 100 grams muesli, in a bowl and in a separate bowl, combine the tahini, maple syrup and apple juice, whisking until smooth and then pour over the dry ingredients and stir to combine and add extra juice if mixture is dry.

  • Step 3: Press mixture into cake pan, sprinkle over remaining muesli, then cover with plastic wrap and chill overnight.
