Ingredients

The ingredients are:
  • 1 cup vegetable oil (250 ml)
  • 2 eggs
  • 2 cups white sugar (440 grams)
  • 1 teaspoon vanilla essence
  • 2 cups plain flour (250 grams)
  • 1/2 teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons ground cinnamon
  • 4 cups apples, peeled cored and diced

How to Make

  • Step 1: Preheat oven to 180 degrees C.

  • Step 2: Grease and flour one 20x30cm cake tin.

  • Step 3: In a mixing bowl beat oil and eggs with an electric mixer until creamy and add the sugar and vanilla and beat well.

  • Step 4: Combine the flour, salt, bicarbonate of soda and ground cinnamon together in a bowl and slowly add this mixture to the egg mixture and mix until combined (the batter will be very thick) and then fold in the apples by hand using a wooden spoon and then spread batter into the prepared cake tin.

  • Step 5: Bake into the preheated oven for 45 minutes or until cake tests done and then let cake cool on a wire rack and once cake is cool serve with a dusting of icing sugar or with a cream cheese icing.
