Ingredients

The ingredients are:
  • 1 1/2 cups chicken stock (hot)
  • 80 grams dry rice (uncooked 1/2 cup regular rice
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 package (10 ounce) frozen broccoli (chopped, thawed, cut into about 1 inch pieces)
  • 1 can (2.8 ounce) French fried onions
  • 1 tablespoon grated Parmesan cheese
  • 1 pound tilapia fish fillets (unbreaded fish fillets, thaw if frozen, I used tilapia)
  • 1/2 cup shredded cheddar cheese
  • Paprika, optional

How to Make

  • Step 1: Preheat oven to 375 degrees

  • Step 2: Combine hot stock, rice,and seasonings.

  • Step 3: Bake covered at 375 for 10 minutes

  • Step 4: Top with broccoli, 1/2 can onions and parmesan cheese

  • Step 5: Place fillets on top diagonally down dish.

  • Step 6: Sprinkle fish light with paprika (optional)

  • Step 7: Bake uncovered at 375 for 20 to 25 minutes or until fish flakes easiy with fork

  • Step 8: Stir rice

  • Step 9: Top fish with cheddar cheese and remaining onion

  • Step 10: Bake uncovered for 3 minutes or until onions are golden brown.
