Step 1: Sprinkle chicken with paprika.
Step 2: Heat 1 tablespoon oil in a large frying pan over high heat and add chicken and cook for 4 minutes each side or until browned and then transfer to a plate.
Step 3: Cut the mushrooms in half and melt 40 grams butter and remaining oil in pan over medium-high heat and add mushroom and cook, stirring, for 3 to 4 minutes or until golden and then transfer to a plate.
Step 4: Add remaining butter to pan and cook, stirring, for 1 minute or until butter is golden brown and then add garlic and tarragon and cook for 1 minute or until fragrant and now return mushroom and chicken to pan and cook, turning occasionally, for 5 minutes or until chicken is cooked through.
Step 5: Remove from heat and add spinach to pan, cover and stand for 2 minutes or until wilted and then season with salt and pepper to taste.
Step 6: Serve chicken with bread, salad and lemon wedges.
