Ingredients

The ingredients are:
  • 1.2 kilogram chicken thighs, halved (6 chicken thighs specified)
  • 2 teaspoons smoked paprika
  • 2 tablespoons extra virgin olive oil
  • 200 grams button mushrooms small
  • 100 grams butter, chopped
  • 5 garlic cloves, thinly sliced
  • 2 tbs fresh tarragon chopped
  • 1 bunch English spinach trimmed
  • Toasted crusty bread, to serve
  • Mixed salad leaves, to serve
  • 1 lemon cut into wedges, to serve
  • 1 pinch salt and pepper, to taste

How to Make

  • Step 1: Sprinkle chicken with paprika.

  • Step 2: Heat 1 tablespoon oil in a large frying pan over high heat and add chicken and cook for 4 minutes each side or until browned and then transfer to a plate.

  • Step 3: Cut the mushrooms in half and melt 40 grams butter and remaining oil in pan over medium-high heat and add mushroom and cook, stirring, for 3 to 4 minutes or until golden and then transfer to a plate.

  • Step 4: Add remaining butter to pan and cook, stirring, for 1 minute or until butter is golden brown and then add garlic and tarragon and cook for 1 minute or until fragrant and now return mushroom and chicken to pan and cook, turning occasionally, for 5 minutes or until chicken is cooked through.

  • Step 5: Remove from heat and add spinach to pan, cover and stand for 2 minutes or until wilted and then season with salt and pepper to taste.

  • Step 6: Serve chicken with bread, salad and lemon wedges.
