Step 1: Combine corn, chives, 1/2 the haloumi, 1/2 the cheddar, flour and seasoning in a bowl and add milk and stir to combine.
Step 2: Combine remaining cheese together in a separate bowl.
Step 3: Heat enough oil to come up 1cm on the side of a large frying pan over a medium high heat and spoon 1/4 cup batter into the pan and cook for 2 minutes or until golden underneath.
Step 4: Sprinkle a little of the cheese mixture on each fritter, turn and cook for a further 2 minutes or until cooked through and the cheese is golden and transfer to a plate and cover to keep warm and then repeat with remaining batter and cheese.
Step 5: Sprinkle fritters with sea salt and serve with tomato and avocado.
