Step 1: Cook noodles, following packet directions, reserving seasoning sachets and tyhen crain well and set aside for 15 minutes to cool and then using scissors, cut noodles into 12cm lengths.
Step 2: Lightly beat eggs in a large bowl and add noodles, carrot, onion, vegetable mix, cheese and 1 seasoning sachet (discard remaining sachet or save for another use) and stir until well combined.
Step 3: Preheat pie maker and spoon 1/4 cup of mixture into each hole and close lid and cook for 10 minutes or until golden and set, transfer to a wire rack to cool and repeat with remaining noodle mixture to make 12 frittatas and serve.
