  • 1/4 teaspoon white pepper
  • 1 teaspoon sugar
  • 8 ounces raw quick cooking grits (2 cups )
  • 8 ounces white cheddar cheese, grated
  • 4 tablespoons unsalted butter, cubed

How to Make

  • Step 1: Be sure to use the deepest pot you have, even when doing half the recipe. The mixture tends to boil over dramatically when the grits are added.

  • Step 2: In a saucepan, combine water, half-and-half, salt and white pepper and bring to a boil.

  • Step 3: Slowly pour grits into boiling water while whisking the entire time.

  • Step 4: (Watch out for splattering; mixture is very hot.)

  • Step 5: Reduce to low heat and continue to whisk often, until thick and completely smooth, about 10 minutes.

  • Step 6: Add cheese and stir gently until cheese melts.

  • Step 7: Whisk again to combine.

  • Step 8: Turn heat off and allow grits to rest 5 minutes.

  • Step 9: Add butter and stir until completely smooth, silky and shiny.
