Step 1: Be sure to use the deepest pot you have, even when doing half the recipe. The mixture tends to boil over dramatically when the grits are added.
Step 2: In a saucepan, combine water, half-and-half, salt and white pepper and bring to a boil.
Step 3: Slowly pour grits into boiling water while whisking the entire time.
Step 4: (Watch out for splattering; mixture is very hot.)
Step 5: Reduce to low heat and continue to whisk often, until thick and completely smooth, about 10 minutes.
Step 6: Add cheese and stir gently until cheese melts.
Step 7: Whisk again to combine.
Step 8: Turn heat off and allow grits to rest 5 minutes.
Step 9: Add butter and stir until completely smooth, silky and shiny.
