Ingredients

The ingredients are:
  • 1/2 cup onion, chopped,vidalia
  • 6 ounces thick-cut bacon ,(3 slices),chopped
  • 4 cups chicken bouillon
  • 1 cup enriched white hominy grits
  • 1 teaspoon worcestershire sauce
  • ½ cup butter
  • 8 ounces sharp cheddar cheese,(2 cups ), divided
  • 1/16 teaspoon cayenne
  • 4 egg yolks
  • ½ cup milk,cold
  • 4 egg whites, room temperature

How to Make

  • Step 1: Preheat oven to 350 F.

  • Step 2: Grease the inside of a 2-quart casserole dish.

  • Step 3: In a small frypan, fry onions and bacon until lightly brown, set aside.

  • Step 4: Bring the bouillon to a boil in a 2-quart saucepan

  • Step 5: Add grits gradually, stirring with a wire whisk.

  • Step 6: Reduce heat and continue cooking, stirring vigorously, until mixture thickens.

  • Step 7: Cover and cook for 15 minutes, stirring often.

  • Step 8: Remove from heat and add Worcestershire sauce, butter, and 1½ cups of cheese, stirring until well blended.

  • Step 9: In a small bowl

  • Step 10: Blend egg yolks with ¼ cup milk.

  • Step 11: Pour into grits and mix thoroughly

  • Step 12: Add more milk if necessary, thinning to consistency of cream of wheat.

  • Step 13: In another, dry bowl

  • Step 14: Beat egg whites until stiff.

  • Step 15: Fold into grits.

  • Step 16: Fold in bacon and onions.

  • Step 17: Pour into prepared baking dish.

  • Step 18: Sprinkle with remaining ½ cup of cheese.

  • Step 19: Bake on middle shelf of preheated oven for 30 minutes, or until fluffy and brown
