Step 1: Mix all ingredients EXCEPT powdered sugar in a bowl with a wooden spoon. Chill for 30 minutes in refrigerator.
Step 2: Preheat oven to 350°F.
Step 3: Prepare cookie sheets with either parchment paper or a silicone baking pan liner.
Step 4: Put sifted powdered sugar in a bowl.
Step 5: Roll dough into 12 equal balls. Roll each dough ball in sifted powdered sugar and place on cookie sheet 2" apart.
Step 6: Bake in preheated 350°F oven starting at 15 minutes. Check carefully to see if bottom of cookie is browning. It should be light golden brown. If not, add 2 minutes at a time and check again.
Step 7: When done, remove from oven and let set in pan for 5 minutes before transferring to cooling rack.
Step 8: When the cookies are completely cool, put remaining powdered sugar in a small wire mesh strainer and dust them again with some sifted powdered sugar.
