Ingredients

The ingredients are:
  • 2 tablespoons oil (peanut oil)
  • 1 brown onion, finely chopped
  • 500 grams ground chicken (mince)
  • 1 red capsicum, finely chopped
  • 125 grams green beans (trimmed and cut into 3cm lengths)
  • 1 garlic clove, minced
  • Gingerroot, fresh (1 cm piece, peeled and finely grated)
  • 1 tablespoon Thai chilli jam
  • 2 tablespoons lime juice
  • 1 1/2 tablespoons light soy sauce
  • 2 teaspoons fish sauce
  • 1/3 cup Thai basil leaves
  • 1 chilli, long red and thinly sliced
  • 4 cups cooked jasmine rice, to serve (4 serves steamed jasmine rice specified)

How to Make

  • Step 1: Heat a wok over medium-high heat and add oil and swirl to coat and then add onion and stir-fry for 1 minute or until just softened and now add mince and stir-fry, breaking up lumps with a wooden spoon, for 4 to 5 minutes or until browned.

  • Step 2: Add capsicum, beans, garlic and ginger and stir-fry for 2 minutes or until fragrant. Add chilli jam, lime juice, soy sauce and fish sauce and stir-fry for 2 minutes or until vegetables are just tender.

  • Step 3: Top stir-fry with Thai basil and chilli and serve with steamed rice.
