  • 1 clove garlic,smashed
  • 2 stalks celery,chopped
  • 1 acorn squash,peeled,chopped
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 4 ounces dry spaghetti,broken in 4ths

How to Make

  • Step 1: Soak beans overnight with bay leaf and garlic

  • Step 2: Next day

  • Step 3: Cook beans until almost soft with vegetable bouillon

  • Step 4: Meanwhile while cooking

  • Step 5: Saute onions and pepper in olive oil

  • Step 6: Add rest of veggies and cook until softened

  • Step 7: Add herbs and spices

  • Step 8: Add to bean pot

  • Step 9: Cook 30 minutes on simmer

  • Step 10: May need to add water

  • Step 11: Add spaghetti broken into smaller pieces

  • Step 12: Cook 10 more minutes

  • Step 13: Check for seasonings

  • Step 14: Take out bay leaf
