Ingredients

The ingredients are:
  • 1 cup bread crumbs (coarse homemade)
  • 1/2 teaspoon lemon zest
  • 2 tablespoons olive oil
  • Salt & Pepper
  • 1 pound dry spaghetti (or pasta of choice)
  • 1/2 cup olive oil (extra virgin)
  • 5 large cloves of garlic, minced
  • 2 to 3 tablespoons lemon juice
  • 1/4 to1/2 teaspoon red chili flakes
  • 1/3 cup finely chopped fresh parsley

How to Make

  • Step 1: In a heavy frying pan, heat the oil and add the bread crumbs, lemon zest, salt & pepper.

  • Step 2: Cook over medium heat, stirring often until the crumbs are crisp and light brown; set aside.

  • Step 3: Cook the pasta in salted boiling water.

  • Step 4: While it is cooking, heat the oil in a small, heavy saucepan.

  • Step 5: Add the garlic and chili flakes and cook until sizzling but not browned; remove from heat.

  • Step 6: Once the pasta is cooked al dente, remove a small cup of pasta water, and drain the pasta.

  • Step 7: Return pasta to the pot, and add the garlic, oil, and lemon juice.

  • Step 8: Mix well over medium heat until hot, adding a little pasta water if the mixture seems dry.

  • Step 9: Add the parsley, mix well and serve with the crispy bread crumbs on top.
