The ingredients are:
  • 1 cup jerusalen artichokes, peeled, cut into 1/2 inch pieces
  • 1 jalapeno pepper, finely chopped
  • 1/4 cup red sweet peppers, chopped
  • 1/4 cup yellow sweet peppers, chopped
  • 1/4 cup orange sweet peppers, chopped
  • 1 stalk celery, sliced
  • 6 medium white mushrooms, sliced
  • 3 large cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon olive oil

How to Make

  • Step 1: Heata skillet over medium heat,add oil, add mushrooms and garlic, stir fry for about 3 minutes or until the mushrooms and garlic is just beginning to brown

  • Step 2: Turn the heat up,add remaining ingredient and stir fry for 5 minutes - This will leave the veggies still crunchy - serve
