Ingredients

The ingredients are:
  • 280 grams oranges (2)
  • 1 grapefruit
  • 5 cups mixed greens (packaged salad greens)
  • 2 carrots, cut into matchstick strips
  • 1/4 cup walnuts, chopped (toasted)
  • 1/2 cup red onion, sliced
  • 1/4 cup basil leaves (sliced)
  • 1 garlic clove, minced
  • 1 tablespoon vinegar (raspberry vinegar, or your favorite vinegar)
  • 1 1/2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

How to Make

  • Step 1: Cut a thin slice off the top of 1 orange so it can stand on a cutting board and cut down the peel on the curve of the fruit, removing all the peel and white pith. Hold skinless fruit over a bowl and cut along the membranes and release the segments and drop them in the bowl; discarding seeds. Repeat with the second orange and the grapefruit. Measure out and receive 1/3 cup juice.

  • Step 2: In a salad bowl combine the fruit, salad greens and the next 3 ingredients (-red onion).

  • Step 3: To make the dressing in a small cup or bowl whisk together the rest of the ingredients (basil - pepper) and the reserved juice. Pour over salad and toss.
