Step 1: Lightly grease a 3 litre slow-cooker with oil. and add the oats, water, apple and vanilla and stir to combine then add the cinnamon stick.
Step 2: Set the slow-cooker on low and cook for 8 hours and then once cooked remove and discard cinnamon stick and stir well and then let stand uncovered for 5 minutes.
Step 3: Serve with a dollop of yoghurt, sprinkled with apple, nuts and seeds and drizzled with maple syrup.
