Step 1: Mash 1 cup blueberries.
Step 2: In 2 qt saucepan, stir together the sugar and cornstarch.
Step 3: Gradually stir in water until smooth.
Step 4: Stir in mashed blueberries and lemon rind.
Step 5: Over medium heat, stirring constantly, cook until thickened and boiling and boil 1 minute.
Step 6: Turn into bowl, cover and cool.
Step 7: Fold in remaining blueberries. Whip cream until double in volume.
Step 8: Spread 1-1/3 cups over the bottom and sides of the pie crust. Fill with blueberry mixture.
Step 9: Garnish with remaining 1/2 cup whipped cream.
Step 10: Chill until set, about 3 hours.
