Ingredients

The ingredients are:
  • 5 ounces olive oil,(2/3 cup)
  • 1 pound onions, finely diced
  • 10 ounces celery, diced
  • 10 ounces carrots, diced
  • 5 teaspoons garlic, chopped
  • 1 can (28 ounces)tomatoes,crushed
  • 20 cups chicken stock
  • 1/2 pound ditalini
  • 1 can(10 ounces )fava beans
  • 10 ounces frozen green beans
  • 10 ounces frozen peas
  • 1/4 cup parsley,minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 4 ounces parmesan cheese, grated

How to Make

  • Step 1: Heat oil in a heavy soup pot over medium heat.

  • Step 2: Add onions, garlic, celery and carrots, and saute until al dente.

  • Step 3: Do not brown.

  • Step 4: Add tomatoes and stock, and heat until vegetables are almost cooked.

  • Step 5: Cook 15 minutes

  • Step 6: Do not overcook

  • Step 7: Add pasta, and continue to cook 10 minutes

  • Step 8: Add green beans , fava beans,peas and parsley.

  • Step 9: Simmer 10 minutes

  • Step 10: Season with salt and pepper to taste

  • Step 11: Put in bowl

  • Step 12: Sprinkle with parmesan.
