Ingredients

The ingredients are:
  • 1 cup raisins (seedless raisins, or craisins if you prefer)
  • 1 cup water
  • 3/4 cup margarine (low-fat margarine, I use Smart Balance Light)
  • 1 1/2 cup sugar substitute (I use Splends)
  • 2 large eggs (or I use Eggbeaters)
  • 1 teaspoon vanilla
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 cups oats (rolled)
  • 1/2 cup nuts, chopped (I use walnuts)

How to Make

  • Step 1: Simmer raisins and water in small saucepan over low heat until raisins are plump, 20 minutes. Drain raisin liquid into measuring cup. Add water to make 1/2 cup.

  • Step 2: Heat oven to 400° F (moderate hot).

  • Step 3: Cream margarine, sugar, eggs and vanilla with a mixer till smooth. Stir in raisin liquid.

  • Step 4: Sift together flour, baking powder, baking soda, salt and spices; stir into wet mixture.

  • Step 5: Add rolled oats, nuts and raisins and stir in.

  • Step 6: Drop rounded teaspoonsful of batter onto ungreased baking sheet 2" apart. Bake 8-10 minutes
