Ingredients

The ingredients are:
  • 6 ounces bacon, cooked and chopped
  • 1 can(15 ounce )white hominy
  • 1 can (15 ounces) pinto beans,drained
  • 1/4 cup hominy liquid from can
  • 1 cup yellow onion, diced
  • 1/2 cup red bell pepper, diced
  • 4 ounces cheddar cheese, shredded(1/2 cup)
  • 1/4 cup pickled jalapeños, diced
  • 2 tablespoons picked jalapeño juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Preheat the oven to 350 degrees.

  • Step 2: Cook bacon and remove from pan but reserve grease.

  • Step 3: In the same pan

  • Step 4: Add back 2 tablespoons of the bacon grease.

  • Step 5: Add the onion and red bell pepper and sauté until tender or about 10 minutes. When cooked

  • Step 6: Add in drained hominy, beans , bacon, cheese, pickled jalapeño, reserved hominy juice and pickled jalapeño juice.

  • Step 7: Place all into a prepared 8×8 casserole pan.

  • Step 8: Season

  • Step 9: Add additional cheese if desired.

  • Step 10: Bake for 30-40 minutes uncovered.
