Ingredients

The ingredients are:
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons extra virgin olive oil
  • 400 grams tomatoes. a medley mix and halved (a mix of different coloured small tomatoes eg cherry tomatoes)
  • 2 tomatoes, medium and thinly sliced
  • 3 yellow peaches, stones removed and discarded and cut into thin wedges
  • 375 g rams fresh ricotta
  • 3/4 cup Greek yoghurt, plain
  • 1 garlic clove, small and minced
  • 1/4 cup dukkah, pistachio and thyme specified plus extra to serve
  • 1/2 cup fresh basil leaves

How to Make

  • Step 1: Whisk vinegar and oil in a large bowl until well combined. Season and then transfer 1 tablespoon of mixture to a small bowl and reserve and then add tomatoes (medley and regular) and peaches to large bowl and gently toss to combine.

  • Step 2: Process ricotta, yoghurt, garlic and dukkah in a food processor until well combined. and season.

  • Step 3: Spread ricotta mixture over base of a large serving platter.

  • Step 4: Drain tomato mixture, discarding liquid and arrange over ricotta mixture and top with basil and extra dukkah and drizzle with reserved vinegar mixture and serve.
